Chicken Dijon Roll up ===================== - 1 lb chicken (thinly sliced or pounded to 1/4 inch thick) - DIjon mustard - prosciutto or ham deli sliced meat - Smoked provolone cheese or swiss - 1 egg - 1 cup italian herb bread crumbs - 1/4 cup grated parmesean cheese - 2 tbsp olive oil Directions: 1) preheat oven to 375 2) Flatten chicken to 1/4 inch thick 3) Spread dijon mustard on one side of chicken. Add Prosciutto. Add sliced cheese. Roll up tightly and hold with toothpick 4) Beat eggs in dish 1. In Dish 2 put bread crumbs, parm cheese. 5) Dip rolled chicken in dish1, then dish 2. OPTIONAL: Cover and refridgerate up to 12 hrs or freeze for later. 6) Spray cast iron pan, put chicken + bake 20-25 min. Good served with asperagus. Variation: - Try adding spinach or arugula to inside (add 2 tbsp water to bowl, toss + microwave 2 min to make tender) - Try adding lemon juice + worcestershire sauce on top - Try adding mince garlic, lemon zest to center
